Lemon and Ginger Tahini Dressing (AIP Modified, Paleo, Whole30)

Creamy tahini dressing made with lemon, garlic, and ginger for salads, roasted vegetables, and grilled chicken or fish.

Ingredients

  • 1 lemon
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, grated
  • cup tahini
  • ½ cup cold water
  • ¼ tsp Kosher salt

Instructions

  • Zest and juice the lemon.
  • In a medium bowl, whisk together 2 tablespoons of lemon juice, all of the lemon zest, sesame oil, ginger and garlic.
  • Add the tahini and continue whisking. It will seize up into a thick paste.
  • Slowly add in the water, one tablespoon at a time, whisking between each addition until the dressing loosens into a smooth, pourable consistency. You may not use the entire amount.
  • Season with salt to taste, starting with a quarter teaspoon and adjusting as needed.

Notes

Makes 6 oz of dressing.
