Fresh turmeric and ginger are the key to this watermelon smoothie. Turmeric is citrusy and bright, and ginger has warmth and heat. Peel and slice a small knob of each into thin rounds. Everything is going into the blender, so there’s no need to chop more finely than this… just enough to make sure the blender can take it the rest of the way.

Meal Prep Tip

Add all of the ingredients to a blender and blend until completely smooth. This is around four cups of cubed, seeded watermelon, plus lime juice, ginger and turmeric, and a scoop of coconut yogurt. Honey is optional, and can be left out if you’re avoiding added sugars, even natural ones. If you opt for it, this is the place to use your best raw honey, for all its added benefits. I also like to add more than just a pinch of pink Himalayan salt for the electrolytes. And watermelon always tastes better with a little salt!

If you can wait, I recommend stashing this in the fridge until its ice cold, then serving. Depending on the texture of your watermelon, you’ll yield around 20 ounces, enough for three generous juice-glass servings. Then, take it outside on the patio and enjoy a little summer refresher.

Yes. Fresh turmeric is usually available in the produce section of well-stocked grocery stores or natural food markets. If you can’t find it — or simply don’t want to deal with it, since it has a knack for staining just about everything it touches — substitute a half teaspoon ground turmeric. Taste after blending and add another pinch if you’d like a stronger turmeric flavor.

Absolutely. Coconut yogurt is my favorite here because its naturally sweet, lightly tropical flavor pairs beautifully with the watermelon and lime. That said, any plain dairy-free yogurt will work, it may just change the flavor slightly.

It seems a little counterintuitive, especially since there’s naturally sweet watermelon and a touch of honey. But I add a pinch of salt for a couple of reasons. First, flavor. Watermelon has always tasted better with a little salt, and it wakes up every ingredient in the blender. Second, it gives the smoothie a small electrolyte boost, which never hurts on a hot summer day. I usually reach for pink Himalayan salt, but if you’re a Celtic salt devotee, go for it. It brings along a few extra trace minerals, too.

A pinch of black pepper is often paired with turmeric because piperine may improve the absorption of curcumin. I don’t include it here because even a small amount changes the clean, refreshing flavor of the smoothie. If you’re making this specifically to maximize turmeric intake, feel free to add a pinch. If you’re following AIP Core, leave it out as black pepper is an excluded spice.

Ingredients

  • 4 cups seeded watermelon chunks
  • ¼ cup lime juice
  • 2 tbsp (10 g) fresh ginger, peeled and thinly sliced
  • 2 tbsp (10 g) fresh turmeric, peeled and thinly sliced
  • 1 tbsp honey, optional
  • ½ cup plain, unsweetened coconut yogurt
  • tsp pink Himalayan salt
  • Water, as needed

Instructions

  • Add the watermelon, lime juice, ginger, turmeric, honey (if using), coconut yogurt, and salt to a blender.
  • Blend until completely smooth, adding a splash or two of water as needed to reach your desired consistency.
  • Taste and adjust with additional honey or lime juice, if desired.
  • Chill until very cold before serving.
